Det m\u00e5ste unders\u00f6kas, t\u00e4nkte jag och min kollega Andreas Lennkvist Manriquez s\u00e5 vi \u00e5kte till Vallentuna.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignright is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.miljomagasinet.se\/wp-content\/uploads\/2020\/02\/4-428x1024.jpg\" alt=\"\" class=\"wp-image-22676\" width=\"380\" height=\"909\"\/><\/figure><\/div>\n\n\n\n<p><b>Joceline Lu och<\/b> hennes familj startade tofutillverkning i Stockholm redan f\u00f6r 20 \u00e5r sedan. N\u00e4r efterfr\u00e5gan v\u00e4xte med den vegov\u00e5g som svept \u00f6ver Sverige beslutade de sig f\u00f6r att investera i en tofufabrik. Resultatet ligger i industriomr\u00e5det Vargm\u00f6tet straxt utanf\u00f6r Vallentuna. Nu har man 25 anst\u00e4llda och producerar s\u00e5 mycket att fabriken beh\u00f6ver byggas ut.<\/p>\n\n\n\n<p>\u2013 De senaste \u00e5ren har vi vuxit med 30 procent per \u00e5r, ber\u00e4ttar Joceline Lu. <\/p>\n\n\n\n<p>Om Yi Pin tidigare hade asiatiska nischbutiker som huvudsaklig marknad f\u00f6r 20 \u00e5r sedan \u00e4r det Ica, Coop och offentlig sektor som i dag \u00e4r de dominerande k\u00f6parna av Yi Pins tofuprodukter.<\/p>\n\n\n\n<p>\u2013 Vi s\u00e4ljer alltmer till offentlig sektor. Inte minst skolor i Malm\u00f6, Uppsala och Stockholm har uppt\u00e4ckt v\u00e5ra produkter. Alla de stora grossisterna har ocks\u00e5 v\u00e5ra produkter, som du numera kan hitta i de flesta livsmedelsbutiker, forts\u00e4tter hon.<\/p>\n\n\n\n<p><b>Yipins sojab\u00f6nor<\/b> kommer fr\u00e5n ett 30-tal ekologiska g\u00e5rdar i s\u00f6dra Frankrike. Andra r\u00e5varor kommer i huvudsak fr\u00e5n Sverige. Yi Pin \u00e4r involverade i projekt d\u00e4r man f\u00f6rs\u00f6ker utveckla nya tofusorter av andra baljv\u00e4xter, men Lu tror att det kan vara sv\u00e5rt. Sojan \u00e4r den baljv\u00e4xt med h\u00f6gst proteininneh\u00e5ll och det \u00e4r soja som alltid anv\u00e4nts f\u00f6r att producera tofu.<\/p>\n\n\n\n<p>Tofufabriken ligger allts\u00e5 i ett anspr\u00e5ksl\u00f6st industriomr\u00e5de strax utanf\u00f6r Vallentuna. Inne i fabriken \u00e4r det tr\u00e5ngt och bullrigt. Arbetet g\u00e5r p\u00e5 h\u00f6gvarv. In i den ena \u00e4nden kommer bl\u00f6tlagda sojab\u00f6nor, ut ur den andra f\u00e4rdigf\u00f6rpackad tofu till servering i en skolmatsal eller f\u00f6rs\u00e4ljning i n\u00e4rmsta livsmedelsbutik. D\u00e4remellan har sojab\u00f6norna kokats till mj\u00f6lk som sedan past\u00f6riseras och till slut pressats ihop till tjocka tofubitar. Dessa rullar sedan vidare p\u00e5 l\u00f6pande band d\u00e4r de sk\u00e4rs upp och paketeras i de f\u00f6rpackningar som sedan g\u00e5r ut i handeln.<\/p>\n\n\n\n<p><b>Yi Pin har nu<\/b> n\u00e4stan n\u00e5tt sitt kapacitetstak och v\u00e4ntar entr\u00e4get p\u00e5 det efterl\u00e4ngtade tillst\u00e5ndet f\u00f6r att f\u00e5 bygga ut verksamheten. D\u00e5 kommer man att kunna producera \u00e4nnu mer klimatsmart tofu.<\/p>\n\n\n\n<p>Utsl\u00e4ppen fr\u00e5n v\u00e5r livsmedelskonsumtion st\u00e5r f\u00f6r en allt st\u00f6rre del av v\u00e5r klimatp\u00e5verkan, i Sveriges del ungef\u00e4r lika mycket som fr\u00e5n bilismen. Och det \u00e4r k\u00f6tt och andra animalier som bidrar med den absoluta lejonparten av matens utsl\u00e4pp.  Att \u00e4ta tofu i st\u00e4llet f\u00f6r biff skulle kunna vara en viktig del i en omst\u00e4llning. Att tofun dessutom kan produceras p\u00e5 hemmaplan med ekologisk soja \u00e4r ett stort plus. Det ska bli sp\u00e4nnande att f\u00f6lja Yi Pins fortsatta resa.<\/p>\n\n\n\n<p>Yi Pin, f\u00f6rresten?
