Den l\u00e5g p\u00e5 Biblioteksgatan, sedan l\u00e4nge en exklusiv g\u00e5gata mitt i city. I dag skulle maten d\u00e4r ha kallats \u201drustik\u201d. Bruns\u00e5s var vanligt och kryddor betraktades som ett utl\u00e4ndskt p\u00e5fund som var g\u00e4sternas eget ansvar. Den befolkades av \u00e4ldre personer som blivit vegetarianer f\u00f6re eller under andra v\u00e4rldskriget och guidats av den karismatiske, men ganske str\u00e4nge, f\u00f6rfattaren och f\u00f6redragsh\u00e5llaren Are Waerland. \n\n<br><br>\n\n Om f\u00f6rfattarna Alice Knutas och Linn Lundberg k\u00e4nner till denna anrika restaurang \u00e4r os\u00e4kert, trots att den l\u00e4nge var en av f\u00e5 i huvudstaden. F\u00f6rmodligen inte. N\u00e4r de kallar sin nya matbok Gr\u00f6na Linjen syftar det i st\u00e4llet p\u00e5 en modern livsh\u00e5llning d\u00e4r vi helt undviker animaliska produkter. Boken har undertiteln bjudmat f\u00f6r veganer och alla andra, vilket ger oss en bra varudeklaration. Allts\u00e5, vegansk mat p\u00e5 en lite mer avancerad niv\u00e5. \n\n<br><br>\n\nAlice och Linn skriver i inledningen till boken att det \u00e4r betydligt l\u00e4ttare att vara vegan i dag \u00e4n f\u00f6r tio \u00e5r sedan. De p\u00e5pekar att det nu fi nns betydligt mer halvfabrikat \u00e4n tidigare och massor med recept p\u00e5 n\u00e4tet som imiterar husmanskost, fast med helt vegenska ingredienser. \n\n<br><br>\n\nDen som har br\u00e5ttom men \u00e4nd\u00e5 vill sl\u00e4nga ihop n\u00e5got snabbt beh\u00f6ver inte g\u00f6ra avkall p\u00e5 sina principer om f\u00f6da och h\u00e4lsa utan har tillg\u00e5ng till bra alternativ. Det fi nns veganska k\u00f6ttbullar med kr\u00e4mig s\u00e5s och mustig korv stroganoff \u2013 trots att k\u00f6tt och gr\u00e4dde \u00e4r helt fr\u00e5nvarande. Perfekt f\u00f6r den som \u00e4r uppvuxen med vanlig svensk husmanskost men har \u00e4ndrat uppfattning och best\u00e4mt sig f\u00f6r att inte stoppa i sig n\u00e5got fr\u00e5n djurv\u00e4rlden. Och samtidigt vill beh\u00e5lla de gamla smakupplevelserna. \n\n<br><br>\n\nF\u00f6r Alice och Linn \u00e4r mat mer \u00e4n bara f\u00f6da, vilket inneb\u00e4r att de \u201dvid festliga tillf\u00e4llen vill kunna erbjuda mat som \u00e4r lagad fr\u00e5n grunden och inte har en massa tillsatser\u201d. Matboken Gr\u00f6na Linjen inneh\u00e5ller d\u00e4rf\u00f6r inga k*ttbullar, utan genomt\u00e4nkta nyt\u00e4nkande recept p\u00e5 s\u00e5dant som kan bli morgondagens favoriter. \n\n<br><br>\n\nF\u00f6rfattarna st\u00e4ller fr\u00e5gan vad som \u00e4r gott i korv (om man nu tycker att det \u00e4r gott)? Jo, kryddorna, tuggmotst\u00e5ndet, fettet och korvens stora f\u00f6rm\u00e5ga att i samma tugga f\u00e5nga en rad komplexa smaker. Samma gryniga och tuggiga konsistens g\u00e5r att f\u00e5 fram ocks\u00e5 om korven tillreds p\u00e5 tofu och smaken blir \u00f6verl\u00e4gsen med kryddor som f\u00e4nk\u00e5lsfr\u00f6n, kryddpeppar och rosmarin. \n\n<br><br>\n\nKnepet \u00e4r att v\u00e5ga l\u00e5ta den veganska maten ta sin egen plats, inte utlova att detta \u00e4r \u201den variant av stroganoff \u201d eller \u201den slags caprese\u201d, vilket skapar f\u00f6rv\u00e4ntningar. I st\u00e4llet ska man lugnt s\u00e4ga att detta \u00e4r \u201dhemgjorda kroppkakor med skogssvamp och bakat \u00e4pple\u201d. G\u00e4sterna m\u00e5ste f\u00f6rm\u00e5s att sl\u00e4ppa det invanda och g\u00f6ra plats f\u00f6r n\u00e5got nytt. \n\n<br><br>\n\nM\u00e5nga r\u00e4tter i boken \u00e4r planerade f\u00f6r s\u00f6ndagsbordet, f\u00f6r f\u00f6rsta m\u00f6tet med hans\/hennes f\u00f6r\u00e4ldrar eller en mycket intressant ny dejt. Maten ska njutas. Den tar tid att laga och ska g\u00f6ra det. I n\u00e5got recept ing\u00e5r exklusiva ingredienser som f\u00e4rsk tryff el. Men i och med att det helt saknas k\u00f6tt, som \u00e4r j\u00e4mf\u00f6relsevis dyrt, blir kostnaderna \u00e4nd\u00e5 \u00f6verkomliga. Redan i de f\u00f6rsta recepten rusar vi in i fantasifulla r\u00e4tter som \u00e4r b\u00e5de bekanta och ok\u00e4nda. Som F\u00e4nk\u00e5lskorv, Ravioli med rostad jord\u00e4rtskocka, Ramensoppa med shiitakesvamp och krispig tofuf\u00e4rs och Friterad aubergine med kryddstekta kik\u00e4rtor i taco-stil. \n\n<br><br>\n\n Sedan har vi Sliders, allts\u00e5 vegoburgare p\u00e5 rostad aubergine, svamp och svarta b\u00f6nor. Beans on toast \u2013 vilket inneb\u00e4r grillat surdegsbr\u00f6d med bondb\u00f6nor och gr\u00e4sl\u00f6ksmajonn\u00e4s. R\u00e5rakor med gr\u00f6na prim\u00f6rer och Schnitzelmacka de luxe. Samt Farfars n\u00e4sselsoppa. \n\n<br><br>\n\nFarfar har varit viktig f\u00f6r Alice, liksom pappa. De tv\u00e5 l\u00e4rde henne att mat och matlagning handlade om njutning. Sedan Alice fl yttade hemifr\u00e5n har hon bjudit hem farfar p\u00e5 granskottsgremolata, cashewricotta och friterade svartr\u00f6tter. Varje g\u00e5ng har tallriken efter\u00e5t varit helt tom. D\u00e4rf\u00f6r har hon till\u00e4gnat boken sin farfar, sin pappa och pojkv\u00e4nnen Martin; tre inbitna k\u00f6tt\u00e4tare som alla kommit att starkt uppskatta hennes veganska r\u00e4tter. \n\n<br><br>\n\n Kanske borde hon ocks\u00e5 ha till\u00e4gnat boken Are Waerland, som n\u00e4mndes i inledningen av artikeln. En mycket intressant person och ig\u00e5ngs\u00e4ttare som kan beh\u00f6va lite nutida uppr\u00e4ttelse. Inte minst eftersom han var den som introducerade vegetarisk kosth\u00e5llning i Sverige och gjorde det popul\u00e4rt bland grupper av intellektuella. \n\n<br><br>\n\n Han hette Paul Henrik men d\u00f6pte om sig till Are n\u00e4r han blev svensk medborgare. Utifr\u00e5n de erfarenheter han fi ck n\u00e4r han studerade medicin i Edinburgh, London och p\u00e5 Sorbonne i Paris skapade han en egen teori om sjukdomars relation till v\u00e5r livsf\u00f6ring och kost.
